Breakfast Cookies, Two Ways

I recently started to travel again for work. I was excited to get back on the road, and flying through the clouds is as beautiful as ever.

My return to work wasn’t all smooth, however, and a 40 minute flight turned into 7 hours and multiple airports due to storms. It was an adventure, to say the least. But I was really happy to have some of these along with me.

I was experimenting with a cookie recipe, and make the Chocolate Almond Cherry Cookies first. I loved them so much, but had some dried blueberries, and decided to play around with a “trail mix” style. I’m not sure which I love more.

These are definitely going to be part of my regular travel meal prep!

Breakfast Cookies

Ingredients:

Almond Chocolate Cherry Cookies:

1 Banana (Ripe/Brown), Mashed

1 Egg

1/4 C Maple Syrup

1/2 tsp Salt

1 tsp Cinnamon

1/4 C Almond Butter

1/4 C Almond Flour

1 C Rolled Oats

1/2 C Almonds, Roughly Chopped

1/2 C Chocolate Chips

1/2 C Dried Cherries

Blueberry Trail Mix Cookies:

1 Banana (Ripe/Brown), Mashed

1 Egg

1/4 C Maple Syrup

1/2 tsp Salt

1 tsp Cinnamon

1/4 C Almond Butter

1/4 C Almond Flour

1 C Rolled Oats

3/4 C Pepitas

3/4 C Dried Blueberries

Directions:

Preheat the oven to 350 degrees F.

Line a baking sheet with parchment paper.

In a large bowl, combine Mashed Banana, Egg, Maple Syrup, Salt, Cinnamon, and Almond Butter. Stir until well combined.

Add in the Almond Flour, and mix well.

Stir in the Oats, Nuts, Dried Fruit, and Chocolate Chips (if using).

Scoop out Cookies onto the baking sheet (I measured out about 1/4 C of the batter for each Cookie). Press down on the Cookies to flatten them out slightly.

Bake for 20-25 minutes. Let cool & serve/store in the refrigerator.

Notes:

  • You can use any nut or seed butter you wish for this recipe.

  • If the nut butter is a little cold, or hard to mix- you can warm it to room temperature or heat it a bit in the microwave. Just make sure it’s not HOT when you add it to the mixture.

  • Try to find dried fruit with no added sugar, if you can. Dried fruit is plenty sweet, and sure doesn’t need any sugar added.

  • You can mix and match the ingredients- just use approximately 1.5 Cups of nuts, dried fruit, seeds, and/or chocolate chips total.

  • These freeze well, so make a big batch!
