Lasagna Soup

So here we are- it’s a new year! I hope your holidays were happy and safe. I know things kind of took a crazy turn again in December, & I hope you didn’t end up having to cancel plans as I did. I was a little disappointed that I couldn’t take my Christmas trip to Montreal this year- I’ve missed spending the holidays there, and really was looking forward to it. However, I found that the month of December ended up being very restful, which it seems is just what I needed to prepare for the year ahead.

It’s super cold this weekend, and I’m taking advantage by working on a bunch of new ideas, including upgrading my website. I’ll be sharing more in coming weeks as to what’s on the horizon, but as for now I’m staying warm with dishes like this Lasagna Soup!

This soup is SO EASY. It’s also warm, hearty, and comforting. The perfect food for a cold January in year 3 of a pandemic!

This soup is very editable- if you don’t want to use beef & pork, feel free to use turkey or chicken. I used gluten free lasagna noodles in my soup, but you can use any pasta you prefer. There’s even a note at the bottom of the recipe to alter it to use zucchini noodles!

Lasagna Soup

Makes 6-8 Servings.

Ingredients:

1 Lb Ground Beef

1/2 Lb Spicy Italian Sausage (bulk, or removed from casings)

1 Tbl Olive or Avocado Oil

1 Med Onion, diced

3 Cloves Garlic, minced

14.5 oz. Can Diced Tomatoes

14.5 Oz. Can Crushed Tomatoes

4 C Beef Broth

1 Tbl Italian Seasoning

1 Tbl Fresh Basil, chopped small

8 Oz Pasta (I used Gluten Free Lasagna Noodles, broken up into bitesize pieces.)

Salt & Pepper, to taste

Ricotta, Parmesan, or Herbs to Garnish

Directions:

Heat the Oil in a large pot, and saute the Onion & Garlic for about 2 minutes.

Add in both Meats. Cook through, for about 5-6 minutes.

Add the Tomatoes, Broth, Italian Seasoning and Basil. Bring to a boil, then turn down the heat and simmer for 10 minutes.

Add in your Pasta & simmer an additional 10 minutes, stirring occasionally.

Add Salt & Pepper to taste.

Serve hot with topping of choice.

Notes:

  • Feel free to use alternative protein options like turkey or chicken instead of the beef & pork sausage..

  • You can use any shape pasta, I just chose to use lasagna noodles.

  • To make using Zoodles (zucchini noodles): use approximately 3 medium zucchini for the noodles. When you add them to the pot cook for 1-2 minutes instead of 10.

  • When reheating, you may need to add additional broth & Spices. IF you don’t, you may find that the pasta has soaked up some of the liquid from the soup. IT’s still tasty, and kind of reminds me of the canned pastas we used to eat as a kid.
