Stay at Home Sardine Salad
This recipe is inspired by items that I found in my pantry, and would like to not see there at the end of this quarantine. I don’t have a huge kitchen, or a big pantry, so I tend to buy what I use. However, on occasion I stock up on sale items, or go through phases of “I’m going to try that.” Now that I’m at home for a bit, I’m trying to use up some of those items before they expire.
Everyone knows sardines are good for you, so I occasionally pick up a few tins at the store with full intention of eating them. I might toss some into a pasta dish here and there, but I really never know what to do with them. Good on the people who eat them right out of the tin- at this moment, that’s not me. And I’m not that horrible travel/health blogger who would EVER tell anyone to take them to eat on a plane. Please, just DON’T.
So here I am with a nice supply of canned sardines in my pantry at the beginning of the stay at home order, and no recipes that struck my fancy. I gathered a few easy to find items at the grocery store and/or in my fridge, and whipped this up. I ate it with some veggies and crackers. If you’re busy baking these days, put it on your homemade sourdough. Or an avocado. Or eat it out of the bowl and do less dishes. Whatever you do, feel good about yourself that you’re eating something relatively healthy during quarantine.
Stay at Home Sardine Salad
Servings: 2
Ingredients:
1 Tin of sardines in olive oil with lemon
1/4 C red onion, chopped
1/4 C celery, chopped
1/4 C fresh dill, chopped
1./2 C Mayonnaise
1 Tbl Grainy, Dijon Mustard (make sure there’s no added sugar)
Directions:
Dump the sardines into a bowl.
Add all remaining ingredients and mix well.
Eat!
Notes:
*If you can’t find./don’t have sardines with lemon, you can always squirt the juice from half a lemon into your salad before mixing.
Feel free to add in a few more chopped veggies like red pepper or carrot.
