Strawberry & Beet Smoothie

Like most people, the Pandemic was hard on my fitness routine. I don’t have a garage or basement for gym space, and I really missed lifting. I tried my best working out at home, but I’ve got to be honest, anything beyond yoga in my living room just didn’t cut it.

Now things are back in action at the gym, with many improvements that hopefully will maintain a better environment, pandemic or not. I’m back in action too, making great progress towards my goals. It feels good to hit those heavy weights!

However, I know that in order to reach my goals, I don’t just need to be consistent in the gym, but I need to be consistent with my nutrition & rest. I’ve been playing around with what works best for me, and this smoothie is my favorite post-workout pick me up!

You’re probably reading through the ingredients wondering where this combo came from. I absolutely love berries in smoothies, especially because they tend to be lower in sugar than many fruits, and are loaded with antioxidants. Plus strawberries are delicious!

The beets in this smoothie are also a nutritional powerhouse. Loaded with good carbs needed after a tough workout, beets are also a great source of fiber, potassium, iron, and vitamin C. The Dill probably threw you for a loop, and you’re just going to have to trust me on this one. I love adding fresh herbs to smoothies, not just for additional nutritional benefits, but for the fresh, bright flavors they add. Strawberry & Beet Smoothie

Ingredients:

1 C Milk (dairy or non-dairy)

1 C Strawberries, frozen or fresh

1 C Beets, Cooked or 1 Tbl Beet Powder

2 C greens

1 Scoop Vanilla Protein Powder

2 Tbl C Fresh Dill

1/2 Tsp Cordyceps Powder

Directions:

Place all ingredients into a blender, & blend until smooth. Enjoy!

Notes:

* I used Hazelnut mylk for my smoothie, but often use Cashew, Almond, or even Walnut.

* I pre-steam & freeze my greens into cubes & keep them in the freezer for smoothies. Check out these ice cube trays for freezing!
