Coconut Pineapple Mojito
It’s National Mojito Day! I’ve been toying with this recipe for a while, finally perfected it, and there it sat in my Drafts until I realized what today was! Clearly, it’s been a week- but never fear- I’m getting it done, and sharing this delightful cocktail with you!
The Myth Coconut I used in this recipe has quickly become one of my favorite zeroproof spirits. I was never a rum fan, and probably haven’t touched coconut rum since I was 20-something. But once I tried Myth, I fell in love. This is the first cocktail I’m making with the stuff, but it definitely won’t be the last. It’s fab, and I’ll be adding it to drinks all summer long.
A note that this cocktail is a little more labor intensive than my usual. I often go for a simple spirit/soda kind of thing. (When I drank, my go to was always vodka/soda.) But I love pineapple and mint, and this drink is worth the effort (which honestly isn’t all that much). Give it a whirl, and let me know what you think in the comments!
Coconut Pineapple Mojito
Makes 2 Drinks.
Ingredients:
1-2 Tbl Tajin
1 C Pineapple, cut into small chunks
1 Lime, cut into quarters
10 Mint Leaves
3 Oz Myth Coconut
6 Oz Pineapple Juice
Club Soda (enough to top off the drinks)
Ice
Mint, Lime, Pineapple for garnish- optional
Directions:
Rim 2 glasses with the Tajin. Set aside.
Add the Pineapple chunks, Lime, and Mint to a cocktail pitcher. Muddle the mixture until combined and juicy.
Pour in the Myth Coconut and Pineapple Juice. Stir until combined.
Fill your glasses with Ice and top with the Mojito mixture.
Top off with Club Soda
Garnish as desired.
Notes:
This cocktail can easily be made with any full proof coconut rum.
If you don’t have fresh pineapple, this works with frozen as well.
