Finally Fall Coffee Cake Muffins

It’s hard to believe the seasons are changing already. Summer produce is starting to dwindle at the Farmers’ Markets & the Fall items are starting to creep in.

I’ve been baking a LOT the past few months. More than I’ve ever baked in my life. I’d rather be traveling, but such is life in a pandemic.

I’ve started buying apples, a fruit that I find I tire of quickly. Usually, I’d drop them into my Balsamic Fruit Crumble Recipe, but I had some Paleo flour left from another recipe, and decided to give coffee cake a go. Since I don’t have a round cake pan, I opted to make them muffins. Here’s the result. I hope you love them as much as I do.

Finally Fall Coffee Cake Muffins

Makes approximately 12 muffins.

Ingredients:

2 Large Eggs

2 Tbl Butter, softened

1/2 C Coconut Sugar

1 C Almond Milk

1 tsp Vanilla Extract

2 C Paleo Baking Flour

1/2 tsp Salt

1/2 tsp Baking Soda

1 C Apples (about one large), grated

1 Tbl Cinnamon

1/2 tsp Nutmeg

Topping:

1/4 C butter, room temperature

1/4 C Coconut Sugar

1/4 C Almond Flour

1 tsp Cinnamon

1/4 C Walnuts, crushed

Directions:

Preheat the oven to 350 degrees F.

Grease your muffin tin, or use paper muffin cups.

In a large bowl, whisk the eggs. Add in ghee, sugar, almond milk, and vanilla. Add the flour, baking soda and salt. Mix until combined.

Add in apples, cinnamon & nutmeg. Stir to combine well.

Scoop batter into 12 muffin cups.

In another bowl, add together the ghee, coconut sugar, almond flour, cinnamon, and walnuts for the Topping. Combine into a thick paste.

Scoop Topping onto the batter of the Muffins.

Bake approximately 30-35 minutes. Insert a toothpick in center and it should come out clean.

Cool muffins & serve.

Notes:

  • I used almond milk, but you can use cashew milk, oat milk, or whatever you prefer.

  • You can dice the apples, if you’d like. I thought they mixed well grated.

  • Feel free to use another nut for the Topping.
