It’s Not Quite Italy Summer Salad
August was a really tough month, and I’m not sure why. Things are slowly starting to open back up, but the chaos felt stronger than ever. everyone is tired of everything. The daily ups and downs are rough. I don’t know about you, but I needed a little time to refocus.
There’s a long holiday weekend coming up. I hope you’ve got some sort of plans to enjoy yourself before we get back to the rat race, even if it’s virtual this year. And while you’re at it, get yourself to the Farmer’s Market, buy some produce, and toss together this tasty salad that even the non-salad eaters will enjoy!

It’s Not Quite Italy Summer Salad
Makes 9 servings.
Ingredients:
2 C Broccoli, chopped small
2 C Cauliflower, chopped small
1 small Red Onion, diced
1 C Bell Pepper, diced
2 C Cherry Tomatoes, halved
1 C Provolone, diced small
1 C Salami, diced small
1/4 C Red Wine Vinegar
1/4 Olive Oil
1 Tbl Italian Seasoning
Salt & Pepper
Directions:
Combine all vegetables, meat & cheese in a large bowl.
in a small bowl or measuring cup, combine oil, vinegar, seasoning, salt, & pepper. Pour over vegetable, meat & cheese mixture. Toss to coat. Serve!
Notes:
I used a 4 oz package of salami in my recipe, but you can also use a stick of salami
Feel free to add your favorite pasta to the mix, and make this I to a pasta salad. (You May need to increase the dressing amount.)
