(Non-Alcoholic) Irish Potato Martini
Let me tell you a little bit about my favorite Philadelphia St. Patrick’s Day treat- Irish Potato Candy. Irish Potato Candy is a sweet treat that does not actually contain any potatoes. The candy is made from coconut and cream cheese, which are combined to form a creamy mixture. The candy is shaped into small, rounded forms resembling miniature potatoes and rolled in cinnamon. And let me tell you, they are DELICIOUS.
Many establishments in the Philly area create Irish Potato coffee or cocktail specials, so I thought I’d do the same. This came out amazing. Make sure you add it to your St. Patrick’s Day menu!
Irish Potato Martini
Makes 1 cocktail.
1 1/2 Oz Myth Coconut Rum
1/2 Oz Lyre’s Amaretti
1 Oz Cinnamon Simple Syrup
2 Oz Coconut Milk
Cinnamon to top
Irish Potato Candy (for garnish)
Directions
Pour the Coconut Rum, Amaretti, Simple Syrup and Coconut Milk into a cocktail shaker.
Shake vigorously.
Pour into a martini glass.
Top with Cinnamon.
Garnish with Candy if you wish!

Notes:
Of course, this can be made with alcohol. Just use your favorite coconut rum and amaretto.
If you don’t have the Lyre’s, or don’t want to add it, you can easily swap out that 1/2 Ounce for a bit more Myth Coconut.
To make the Cinnamon Simple Syrup: Combine 1 C Sugar, 1 C Water & 4 Cinnamon Sticks in a sauce pan over medium heat. Warm until the sugar dissolves. Let cool, strain, and store in a clean glass jar.
