On The Go Baked Oatmeal
It’s been a bit since I’ve shared a recipe. I’ve been trying to reset my mind for the new year, and well, then 2021 happened….
Despite what feels like never-ending bad news, I see a great deal of hope in 2021: Leaders standing up for what they believe in, people speaking up with their votes, vaccines being distributed, businesses emerging stronger, with new ways of doing things.
There’s a lot to look forward to in 2021. One of the things I most look forward to is travel, and busy work days where we find ourselves on the go again. These Banana Walnut Baked Oatmeal Cups are easy to make and take wherever your 2021 may take you.
Until then, you can still make these and grab one for your morning walk around the neighborhood, or as a snack when your kids are done with their Zoom classes.

On the Go Baked oatmeal
Ingredients:
3 Very Ripe Bananas, smashed
2 Eggs
1/4 C Honey
1 tsp Vanilla Extract
2 C Gluten Free Old Fashioned Oats
1 tsp Cinnamon
1/2 tsp Nutmeg
1/2 tsp Baking Soda
Pinch of Salt
1/2 C Walnuts, crushed
1 C Chocolate Chips
Directions:
Preheat oven to 350 degrees F.
Grease a muffin pan, or line with muffin cups.
In a large bowl, mash the bananas with a fork. Then whisk in eggs, honey, and vanilla extract.
Fold in oats, cinnamon, nutmeg, baking soda, and salt. Then mix in the walnuts & chocolate chips.
Spoon into cupcake cups, and bake for 40 minutes.
Notes:
Feel free to use a nut besides walnuts, or omit them altogether.
If you’re traveling with these, you may wish to use muffin liners.
You can also make bars by pouring the mixture into an 8'“x8” baking pan instead.
