It’s cold and snowy in Philly this week. It sure makes the city beautiful, but it also makes me long for warmer weather. Thankfully, there’s less than 50 days until spring.

But before Spring shows up, there’s a big old football game this weekend, and I suspect you might need some good eats for watching. I don’t know about you, but I’m tired of the elaborate meals & sourdough baking. After a year of this pandemic, I want simple, tasty food.

This recipe is definitely simple. And it’s adjustable to your needs. You can make skewers for a small gathering, or use toothpicks & make apps for a crowd. The dipping sauce is super simple & tasty, and so much better than ketchup.

Touchdown Tots

Serves 8-10

Ingredients:

1 Bag Tater Tots, room temperature

1 Package Dot Dogs or Mini Hot Dogs

1/2 C Cheddar Cheese, grated

1-2 Green Onions, chopped

Sour Cream

Ranch Dressing

Directions:

Preheat oven to 425 degrees F,

Skewer Tater Tots and Hot Dogs on wooden skewer sticks or toothpicks. Place skewers on a baking sheet lined with parchment paper.

Bake skewers for 20 minutes, flipping once half way through.

Remove from the oven, and top with Cheddar CHeese. Return Tots to the oven for about 5 minutes, until cheese is melted.

ReMove from the oven, and top with green onion.

Combine 1/2 Cup sour cream with 1/2 cup of ranch dressing in a small bowl. Mix thoroughly, and serve with Tots as a dipping sauce.

Notes;

  • This is a flexible recipe. Use whatever hot dogs you like, or even sausage. If using full size hot dogs, slice into bite size pieces before placing on skewers.

  • Number of skewers will vary based on size of skewers, or if you are using toothpicks.

  • The ranch dipping sauce can be made in any amount, just use equal parts Ranch & Sour cream.
