Pea & Prosciutto Salad
I love Farmers’ Markets. I love wandering around, talking to farmers, trying new products, and picking out the perfect produce for my week.
Lately, however, I can’t just wander around the markets- there’s usually a line to get in, and it’s not the time to “just wander” through a busy market space. Instead, I’ve found a local service that will deliver much of the same farm fresh produce to my doorstep! I truly appreciate the fact that this service is available to me, and that it’s affordable. It’s something I look forward to every week!
Last week, I got a bunch of beautiful purple snow peas, They look so beautiful, and are absolutely delicious. This salad came out of a need for some easily prepped salads for a busy week & the items I found in my fridge. It’s simple to make, and will make a great addition to your summer food prep, or a socially distanced family picnic! Enjoy!
Pea & Prosciutto Salad
Makes approximately 8 servings.
Ingredients:
1 lb Snow Peas, tips removed, & sliced on the diagonal
1/4 c plus 1 tbl Extra Virgin Olive Oil
2 oz Prosciutto, diced
1/2 Small Red Onion, chopped
1 Lemon, juiced
Salt & Pepper
2 oz grated Pecorino Sardo cheese
Directions:
Soak the trimmed snow peas in cold water for 10 minutes.
Meanwhile, in a medium skillet, heat 1 tablespoon of the olive oil. Add the prosciutto and cook over moderate heat until lightly browned, about 5 minutes.
Add the onion and cook, stirring occasionally, until soft, about 5 minutes.
Drain the snow peas and pat dry.
In a bowl, whisk 1/4 cup of olive oil with the lemon juice. Season with salt and pepper.
Add the snow peas, prosciutto, and onion.
Toss well to coat with dressing.
Grate the pecorino on top and serve.
Notes:
These are purple snow peas. You can use green snow peas, or even try this with snap peas.
