Spinach Salad in a Blue and White Bowl

Happy National Blueberry Day!

Blueberries are one of my favorite fruits. When they’re in season, I make sure to take advantage of them as much as possible.

This salad celebrates all things Summer. It’s full of fresh produce, crunchy nuts, and tangy blue cheese.

If you’re too hot to cook, need a side dish to bring to a Bar-B-Q, or just want to enjoy all the fresh Summer flavors, this salad is for you.

Get yourself out to the Farmer’s Market this weekend and pick up the ingredients to make this tasty & simple salad. I promise you it will be in your salad rotation all Summer long!

Summer Spinach Salad

Serives 4.

Ingredients:

For the Dressing:

2 Tbl Extra Virgin Olive Oil

3 Tbl Balsamic Vinegar

1 Tbl Grainy Dijon Mustard (no suggar added)

1 Tbl Honey

Salt & Pepper

For the Salad:

6 C Spinach

1 C Blueberries

1 C Walnuts

1/2 C Sunflower Seeds

1/2 C Blue Cheese, crumbled

Directions:

Combine Olive Oil, Balsamic Vinegar, Mustard, and Honey. Season to taste with Salt & Pepper. Whisk until fully combined and emulsified.

Mis Spinach, Blueberries, Walnuts, Sunflower Seeds and Blue Cheese in a large bowl. Toss with Dressing until evenly coated.

Serve.

Notes:

  • If you don’t like Blue Cheese, Goat Cheese would be a great subsitute.

  • Feel free to add in any summer berries you wish- Blackberries or Raspberries would be great in this salad alone, or added in with the Blueberries!

  • If you’re making this salad to serve later, add the dressing right before serving.
