The thing I love most about Summer is all the fresh fruit. I’m not normally a big fruit eater, but in the summer I can’t get enough of fresh stone fruit & melons.

Today is National Watermelon Day. Watermelon is over 90% water, and can help with hydration- something everyone needs to keep in mind on hot, humid days. Watermelon may also help with heart, skin, and eye health. And it’s full of antioxidants that can help with inflammation and oxidative stress.

I love to eat watermelon simply sliced, or in a fruit salad. But during the recent heatwave, I decided to try something a little cooler. I tossed half of the watermelon I was cutting up into the freezer, and a few hours later I blended it together with other ingredients I had on hand to create the refreshing treat below.

Watermelon Summer Slush

Serves 2.

Ingredients:

2 1/2 C Frozen Watermelon, Chopped

2 1/2 C Fresh Watermelon, Chopped

1/4 C Fresh Mint Leaves

Juice of 1 Lime

1 tsp Lime Zest

Directions:

Place all ingredients in a blender. Blend to desired consistency.

Pour into 2 glasses and serve.

You can also use a food processor to blend your ingredients if that’s easier for you.
