Buffalo Chicken Sloppy Joes

It’s been a weird start to 2025, hasn’t it? Stressful, long, exhausting… When I’m stressed, I often crave comfort food. But I also often don’t feel like cooking anything complicated. This usually leads to me ordering out. But when you’re trying not to spend a ton of money, or eat a ton of calories, that’s not helpful. I find if I’ve got a few staples in the house, and can make something quick and easy, that’s a win. If it’s something I can prep ahead of time, and eat for a few days- even better!

This recipe certainly hits the spot when it comes to comfort food, it’s simple to make, and it’s delicious. It takes one of my favorite comfort foods- sloppy joes, and drops in the tangy flavor of buffalo wings. As a bonus, it’s made with ground chicken so it’s also a bit lighter than the original beef sloppy joes. The ingredients are simple, and you probably have most of them already. And it’s not too late to add it to your menu for the Big Game this weekend.

Buffalo Chicken Sloppy Joes

Serves 4.

Ingredients:

  • 1 Tbl Olive Oil

  • 1/2 C Onion, diced small

  • 1/2 C Celery, diced

  • 1/2 C Carrots, diced small

  • 1 Clove Garlic, minced

  • 1 Lb Ground Chicken

  • 8 Oz Can Tomato sauce

  • 1/4 C Buffalo Sauce

  • 1 Tbl Worcestershire Sauce

  • Salt & Pepper, to taste

  • Blue Cheese Dressing

  • 4 Rolls

Directions:

Heat the Oil in a large skillet over medium-high heat.

Add in the Onion, Celery, Carrots, Salt & Pepper and sauté about 5 minutes. Add in the Garlic and sauté another minute.

Push the vegetables off to one side of the skillet.

Add in the Ground Chicken and break it up with a wooden spoon. Season it with Salt & Pepper and heat until it’s no longer pink.

Stir the vegetables and mix together.

Pour in the Worcestershire, Tomato Sauce, and Buffalo Sauce and stir together.

Cover the skillet with a lid and lower the heat to medium-low. Simmer for 15 minutes.

Toast the buns. Top them with the Sloppy Joe filling, and drizzle Blue Cheese on top.

Notes:

  • Primal Kitchen is my favorite Buffalo Sauce, and it come in mild to spicy. You can get it here.

  • You can certainly change out the ground chicken to turkey. I have made this multiple times, and have used both.

  • I’ve omitted the bun, and topped a sweet potato with the Sloppy Joe filling, and it’s also delicious.

  • You can use any brand of Blue Cheese dressing, or make your own. I prefer fresh, local when possible. You can find better dressings in the refrigerated section of the grocery store.
